Gluten-Free Herbed Tomato & Cucumber Tea Sandwich

Servings: 10 sandwiches
Prep Time: 30 minutes

Ingredients

  • 2 ounces (½ stick) butter softened
  • 2 ounces (¼ block) cream cheese softened
  • ¼ cup grated parmesan cheese
  • 4 tsp. dry chives
  • ¾ tsp. dry tarragon
  • ¾ tsp. dry basil
  • ¼ tsp. kosher salt
  • ¼ tsp. black pepper
  • 8 – 10 slices white bread for Gluten-Free, we recommend Canyon Bakehouse Mountain White Bread
  • 2 – 3 heirloom tomatoes cut into 1/4-inch slices
  • 1 cucumber cut into 1/8-inch slices

Instructions

  1. Combine softened butter and cream cheese in a bowl until smooth.
  2. Add the parmesan, herbs, salt, and pepper and mix until completely combined.
  3. Spread two slices of bread with the herbed cream cheese.
  4. Cover one piece of bread with slices of cucumber, then cover the cucumber with 2 – 3 slices of tomato.
  5. Close the sandwich with second slice of bread.
  6. Trim the crusts and slice into 2 rectangles with a bread knife. Repeat until the desired number of sandwiches are made.
  7. Serve immediately.

Notes

Assembly Tips:

  1. Freshly chopped herbs can be substituted for the dry herbs. Use 2 Tbsp. fresh chives; 1 1/2 tsp. fresh tarragon; and 1 1/2 tsp. fresh basil or adjust amounts to your personal taste.
  2. No cream cheese on hand? Use 2 more ounces of butter + 1/8 tsp. salt to substitute.
  3. Don’t assemble too far ahead of time or the juice from the tomato will soak into the bread.
